If you’ve only tried one balcones whisky, it’s probably baby blue.

I don’t really like how balcones states that they keep it young to preserve the flavor of the blue corn. Intentionally youthful, baby blue captures the essence of this prized corn with a round nuttiness, roasted overtones and refined complexity. That first whiskey was balcones baby blue.

The whiskey is named for its mash bill and it’s aging. Its complexity of flavors and symphony of corn notes suggest that, if done right, you can create a great whiskey that doesn’t spend a lot of time in barrel. Made from atole, a roasted blue corn meal, this rich, nutty spirit has the freshness and verve of traditional corn whisky but with terrific complexity and texture.
